I am pretty new to Do-More BRX but I am enjoying the product & its vast capabilites!! I have a question. Can I use a BX-DM1E-M-D as a stand alone CPU & add input & output modules to this unit? I have installed several bricks but I have applications that the brick just eats up too much real estate with unneeded I/O that I won't use.

Absolutely!  That is exactly what the -M models are for.

Just add whatever expansion modules you need.  You can add up to 8 modules for local expansion.  But using the Ethernet port, add up to 16 slaves of BX-DMIO each with up to 8 I/O modules, you can have THOUSANDS of I/O with a -M CPU.
